Perfect Homemade Apple Fritters

Ingredients:

  • 3 cups, diced about 2 – 3 apples, peeled and diced into bite-size pieces (honey crisp or granny smith).
  • 1 tablespoon lemon juice, fresh
  • 1 tablespoon arrowroot
  • 1 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 tablespoon granulated sugar
  • 1 large egg
  • 1 tablespoon melted butter
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • vegetable oil for frying

Glaze:

  • 1 cup confectioner’s sugar
  • 1/2 teaspoon vanilla extract
  • In a medium-sized bowl, whisk together the powdered sugar and milk.

INSTRUCTIONS

  1. In a medium-sized bowl combine diced apples with cinnamon, sugar, salt, arrowroot, corn syrup, and 1 tablespoon of milk. Set aside.
  2. In a large bowl, whisk together cake flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Make a well in the dry ingredients and add the milk, butter, egg, and vanilla extract.
  4. Carefully fold in the apple mixture.
  5. Heat about 2 inches of canola oil in a heavy-bottomed pot or dutch oven to 360-375F.
  6. Using a heaping 3T cookie scoop, carefully drop batter into the oil and fry for about 1:30 – 2 minutes on each side, or until both sides are a deep golden brown.
  7. Using a slotted spoon, carefully remove the fritters and place them on a paper towel-covered wire rack.

Make the Glaze: When cool enough to handle (but still warm) dunk the fritters into the glaze and place them on a wire rack to harden slightly before digging in. Enjoy warm.

Frying Tips

the size of your fritter will alter the cooking time. Whatever size cup you use, keep the size of the fritters consistent, at least the ones that are in the pan together to ensure even cooking.

Be sure that your oil doesn’t get too hot. This will burn your batter and leave you with undercooked fritters. Keep the temp at a medium-low once it reaches 375 degrees.

Substitutions

Flour: Gluten-Free and nut flours work great, too.

Alternatives: Use Almond flavor.

Glaze: Add a little cinnamon or apple pie spice to the confectioner’s sugar for the added flavor.

Storing

These fritters are the best freshly made and eaten within 24hrs. Lightly cover with a paper towel on the counter, if you have any leftovers!
