The fastest way to make chicken salad is either using canned chicken breast or the tastiest and flavorful chicken is using rotisserie chicken like from Costco. However, if you are avoiding any ingredients ending with ose, read your labels before purchasing any prepared or canned food items.

Flavor and dietary variations:

  • Add bacon! Fold through half a cup of chopped bacon (precooked and cooled) and sprinkle extra on top before serving.
  • Add more Crunch: Use one packet of Power Up MEGA OMEGA Trail Mix. (walnuts, dried mango – almonds – cranberries – pumpkin seeds). Costco currently has bulk size bag of snack size pouches, in 3 different trail mixes; which I use for a quick snack and in baking recipes.

Ingredients

  • 2 cups cooked diced chicken; rotisserie or poached
  • 1 apple, your choice (fuji, honey crisp, gala, etc.), peeled and cored
  • 1 cup celery, diced
  • 1/2 cup mayonnaise or avonnaise
  • 2 snack packets of Power Up “Mega Omega Trail Mix
  • 2 Tablespoon honey mustard
  • salt and pepper to taste

NOTES:

The chicken salad is something I ALWAYS recommend making ahead. This allows the flavors to meld together and stick onto the chicken and celery, making every bite incredible and so delicious!

To store: Place leftovers in a clean air tight container and store in your refrigerator, covered, for up to 5 days; Never leave food uncovered, it will absorb other odors from other foods within the fridge.

To make ahead: Prepare the salad up to five hours in advance. This gives all the flavors to mesh well together and still taste fresh!

How to serve chicken salad:

  • Over Salad: Place a scoop on top of mixed greens.
  • Sandwich: the classic way to enjoy chicken salad, toast two slices of keto bread. And add some fresh tomato slices (to take out leptin in a tomato, remove seeds and skin) and lettuce.
  • Use as a dip: Of course, my favorite way! Serve it with thinly sliced zucchinni or keto crackers.
