MAKE THE GOURMET CHOCOLATE CHIP COOKIES DOUGH

The first step in making these easy chocolate chip cookies is to combine the dry ingredients in a medium size bowl, making sure to sift all ingredients together completely.

When doing this, make sure to Measure the flour correctly. Be sure to use a measuring cup made for dry ingredients (NOT a Pyrex liquid measuring cup). Then, measure flour by scooping it into a measuring cup and leveling it with a knife.

Next, cream together butter and sugars, make sure to soften the buttery early by leaving it t room temperature for at least two hours before baking so it’s ready to go when you need it. You can also warm it in the microwave for about 7 seconds, but be very careful not to melt it.

Once the butter/sugar mixture is well combined, add the eggs & vanilla and beat to combine.

Add dry ingredients and stir until just combined. Then add the chocolate chips, coconut and pecans and beat until they are evenly distributed throughout the dough.

Want gooey chocolate chips in every bit; Use LOTS of chocolate chips.

The chocolate chip cookie dough should be easy to roll and not sticky. It should not be dry or crumbly.

Once the cookie dough is finished, it’s time to portion and roll the dough. I know many people eyeball it when making cookies. However, I highly recommend using an #40 cookie scooper.

Using a cooking scoop ensures that all the cookies are uniform in size so that they bake evenly. I love this stainless steel cookie scoop and use it every time I make cookies. These cookies will be big cookies, moist and chewy on the inside.

Can you freeze cookie dough?

If you are not baking the dough right away, you can freeze it by taking the cookie dough ad forming it into a log on a sheet of parchment/wax paper and then aluminum foil. To Freeze cookie dough; I always make a full batch and freeze some. That way, whenever I am craving cookies or have guests, I just take out the log unwrap the dough slice it into 2-inch slices and bake them on a cookie sheet 2 inches apart. Or you can scoop out the dough beforehand, place them on the cookie sheet, and place them in the freezer for 15 to 30 minutes. Take out and place them in an airtight container or zip-loc freezer bag and place them back in the freezer.
