Orange Cranberry Apple Pie Bars – These apple pie bars turned out so good, just as delicious as an apple pie and apple crisp made with plenty of diced apples, cinnamon, butter, strussel topping and a shortbread crust bottom. And, fresh out of oven, their so good, you won’t be able to stop at just one. Talk about yum!

You will be using the same dough for the crust and the crumbles to make these simple and from scratch apple pie bars. I will be a thick crust and crumbles with all of the usual spices and apples that makes these apple pie bars so yummy and they are perfect any time of the year, especially in the fall and winter.

What are the best apples to use in apple pie bars?

My favorite apples to use for any apple recipe is granny smith, fuji, gala, honey crisp.

What is apple pie spice?

To save time you can use apple pie spice which has all of the spices used in most apple recipes; cinnamon, nutmeg allspice and cardamom. However, the recipe I had experimented with had ginger included in it’s ingredients. I like ginger.

Can you freeze apple pie bars?

Yes! You can keep in the freezer in an airtight container for up to 3 months. To thaw them, take them out of the freezer and place them in the fridge overnight.

HOW TO MAKE APPLE PIE BARS WITH CRUMB TOPPING

I start with the apples. First, peel, core and slice the apples into small diced shaped pieces. During this process make sure to place the apples in a medium-sized bowl and add the lemon juice. The lemon juice helps to keep the apples from browning with you put everything together. Once done with the apples, toss with the rest of the filling ingredients; sugars, flour, cinnamon and nutmeg. Then, set it aside.

Next, you will start making the dough. Combine flour, cinnamon, and sugar in a large bowl.

Then, add cold cubed butter and cover with flour mixture, cut the butter into the flour mixture easily with 2 folks until they look like breadcrumbs.

Later, spread 2/3 of the mixture into the oven-proof dish with a spoon. lightly flour the spoon to avoid it sticking to the flour butter mixture. After that, I add the apple mixture over the dough and cover the apples with the remaining 1/3 of the dough. I make some big crumbles by lightly squeezing the dough.

Finally, I bake for 55 minutes until the top becomes golden brown and crumbles are crunchy. I let it cool completely before slicing with a sharp knife. When it is cool, I cut it into 16 pieces.

You can keep these bars in the fridge in an airtight container up to 4 days or you can freeze up to 3 months.

  • 4 medium sized apples, diced
  • 3 cups all-purpose flour
  • cornstarch or arrowroot
  • brown sugar
  • granulated sugar
  • butter
  • 1 tsp. sea salt
  • 1/2 tsp. cinnamon
  • 1/2 tsp. cardamom
  • nutmeg
  • ginger
  • lemon juice
  • 1/2 cup Trader Joe’s orange flavored cranberries
  • 1 cup chopped pecans (optional)

Shortbread crust

  • Butter
  • Swerve, powdered sweetner
  • Almond flour
  • Coconut flour
  • Sea salt
  • Pecans, chopped
