Pancit with Bean Thread Noodles

Pancit with Bean Thread Noodles is another of my favorite Filipino dish that’s delicious. And, this Pancit is made with – of course – Bean Thread Noodles (made out of mung beans), rotisserie chicken, shrimp, Chinese sausage, cabbage, carrots, celery, onions, garlic, tamari, patis, lemon, and seasonings. However, sometimes I will combine both.

What are Bean Thread Noodles?

A thin transparent noodle. Also called glass or cellophane noodles. Furthermore, you can find bean thread noodles in any Asian Market. Although, these type of noodles is usually made from mung beans but without the wheat or eggs. Though they are high in carbs, but no gluten or fat. However, in regular grocery stores, sometimes you will find a noodle package called Sai Fun, that you can use as well.

Sotanghon Noodles

These are cellophane noodles, also known as Vermicelli, made from bean-thread noodles (crystal noodles or glass noodles)

Bihon Noodles

Bihon refers to a type of pancit (Chinese-influenced Filipino noodles). However, these are thin white stick-like noodles made from rice flour. And, is usually found in a regular grocery store, the package is labeled Maifun.

You will need:

  • deep fry pan
  • large pot
  • vermicelli noodles or bean thread noodle (Sia Fun) 
  • rotisserie chicken
  • shrimp
  • Chinese sausage
  • cabbage
  • carrots
  • celery
  • onions
  • garlic
  • green onions
  • tamari
  • olive oil

There are several methods of softening the noodles. Use chicken broth from boiling the fresh chicken in a little soy sauce; add noodles to the broth. However, after the chicken is done cooking, place the noodles to soak for 10 minutes in the chicken broth. Then, drain and set aside

Second method; Boil noodles for 10 minutes in chicken broth which gives the noodles more flavor. Then, drain and set aside.

Ingredients

  • 2 oz vermicelli noodles or bean thread noodles (I use the Sun Luck brand and the Sia Fun style) 
  • 1 rotisserie chicken, remove skin and shredded
  • 1/4 lb small cooked shrimp (8 to 10 pieces), peeled, no tail
  • 1/2 a package of Chinese sausage, sliced thin
  • 1/2 cabbage, shredded
  • 2 carrots, sliced
  • 2 celery, sliced thin
  • 1/2 onion, sliced thin
  • green onions, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons Better than Boullion, chicken flavor
  • 3 tablespoons tamari (low-sodium soy sauce) or coconut aminos
  • 1/4 cup olive oil

Instructions

  1. Soak the noodles in chicken broth for 10 minutes. Drain the liquid and set aside.
  2. Heat a cooking pot and then pour 3 tablepoons of olive oil.
  3. Once oil becomes hot, add onion and stir-fry until onion is translucent. Add garlic, and continue to saute until brown and fragrant.
  4. Add Chinese sausage. Continue to sauté until it turns crispy. 
  5. Add shredded chicken. Saute for 3 minutes.
  6. pan-fry the shrimp for 1 minute/
  7. Pour tamari and chicken broth. Simmer for 20 minutes on low heat.
  8. Add carrots, celery and cabbage. Stir. Cover and cook for 2 minutes.
  9. In a large pot, toss all ingredients together and cook until the liquid has been absorbed completely.
  10. Served with steamed rice, plate, and garnish with green onions. Enjoy!!!

NOTES

There are several substitutions for soy sauce; tamari which is a low-sodium soy sauce and coconut aminos.

Frozen raw or cooked shrimp can be used in place of fresh shrimp.

Lemon juice dribbled on the Pancit tastes amazing and gives the dish a different twist to the meal.

Other ingredients to use are snow peas, Chinese barbecue pork, shitake mushroom, and peas.
