What are Swedish Meatballs?

These dainty meatballs, comprised of a mixture of beef and pork seasoned with nutmeg and cardamom, are perfectly complemented by a Swedish meatball sauce—a sumptuous gravy crafted from a roux base and beef stock, enhanced with sour cream and a touch of lingonberry jelly. Alternatively, they are delightful served over egg noodles as a main course or presented as individual appetizers alongside Swedish meatball sauce.

Origin

In 1755, chef Cajsa Warg included the first written recipe for Swedish meatballs, known as kötbullar, in her Guide to Housekeeping for Young Women. And, employed by a family with close ties to the king (King Charles XII of Sweden). Furthermore, the king had brought the recipe back from Turkey in the 18th Century. Moreover, Warg’s book also featured the earliest recorded recipe for kåldolmar, a stuffed cabbage dish akin to dolma found in Ottoman cuisine. However, historians in Sweden concur that kåldolmar, a beloved staple in Swedish cuisine, has its roots in Ottoman culinary traditions, much like Swedish meatballs and the nation’s enduring passion for coffee.

With the passage of time, the köfte recipe disseminated across Europe, eventually reaching Sweden, where it underwent adaptation to suit local preferences and available ingredients. In Sweden, the köfte recipe was adjusted to incorporate a blend of ground beef and pork, often served alongside a creamy gravy or sauce and mashed potatoes. This dish eventually became known as köttbullar, or Swedish meatballs.

Ingredients in Easy Homemade Swedish Meatballs

  • Meat: Choose ground beef as the foundation for this recipe, or introduce a hint of ground pork for variety. For further experimentation, consider using other meats such as veal, lamb, ground turkey, or lean Italian sausage.
  • Binders: Eggs and breadcrumbs play the role of binding agents, ensuring the meatballs retain their shape during cooking.
  • Liquid: Milk is incorporated to add moisture to the mixture.
  • Flavor: Italian seasoning, Parmesan cheese, onion, and garlic powder contribute to the flavor profile of these straightforward meatballs. This traditional Homemade Swedish Meatballs flavor pairs well with spaghetti, but feel free to adjust the seasonings or incorporate fresh herbs to complement the other flavors in your dish.

How to Make Easy Homemade Swedish Meatballs

These easy-to-make meatballs come together quickly. Prepare the baking pan by lining it with parchment paper as instructed in the recipe, or simply use cooking spray for easy cleanup.

To make Meatballs:

First, grate the onion using a standard box grater into a large bowl, along with its juices.

Then, combine the bread with the grated onion, ensuring the onion juice saturates the bread and breaks it down. Allow it to sit while you prepare the other ingredients, approximately 1 minute.

Next, Incorporate all the remaining ingredients for the meatballs, using your hands to thoroughly mix. Using a scoop size 50mm (3 Tablespoon), Scoop out a heaping tablespoon of the mixture and gently roll it to shape it into a ball. Shape the mixture into 48 meatballs, each measuring 1½ inches in diameter, and ensure they are spaced ½ inch apart.

To cook the meatballs: In a large non-stick frying pan, heat 1 1/2 cups of olive oil over medium-high heat. Add the meatballs and cook until browned all over, approximately 3 to 4 minutes. Once browned but not fully cooked, carefully transfer the meatballs onto a plate.

To Make Gravy:

Add butter into skillet and melt. Add flour and stir in. Cook for 1 minute.

While mixing, add about 1/4 cup of the beef broth – it will thicken quickly. And, then gradually add remaining beef broth, stirring as you go. Switch to whisk if required to make it lump-free.

When liquid is simmering, add meatballs and juices pooled on the plate.

Turn up the heat slightly to keep it at a rapid simmer, Cook for 8 – 10 minutes or until the liquid thickens into a thin gravy, stirring occasionally.

Add cream, simmer for a further 2 minutes then remove fro stove.

Serve over mashed potato (or Cauliflower Mash for low carb). For a truly authentic experience add a dollop of Ligonberry jam on the side!

While I personally prefer baking these Homemade Swedish Meatballs, you have the option to pan-fry them or add them directly into boiling soup or sauce. However, using the oven eliminates splattering and the need to flip the meatballs, resulting in consistently juicy meatballs with a delicious crust every time!

Tips for Spectacular Easy Homemade Swedish Meatballs

  • Avoid Overmixing: To preserve the tenderness and juiciness of the meatballs, avoid excessive mixing of the ingredients. Overmixing can lead to dense and tough meatballs.
  • Consistent Size: Ensure uniformity in the size of the meatballs to ensure even cooking; using a cookie scoop, sizing 50mm (3 tablespoons) simplifies this process.
  • Meat: A combination of pork and beef contributes to the authentic flavor of Swedish Meatballs, with pork adding extra softness and juiciness to the meatballs. However, you can opt for all beef or all pork if desired. Grass-fed ground beef, which contains a moderate amount of fat, enhances the tenderness and juiciness of the meatballs. Chicken or turkey can also be used as alternatives. If using extra lean meat, consider adding a small amount of olive oil or chopped bacon for added moisture.
  • Allspice: With its aroma reminiscent of cloves, allspice is a specific spice readily available in most grocery stores at standard spice prices. It can be substituted with Mixed Spice, or a blend of nutmeg, cinnamon, and cloves in equal parts.
  • Cream vs. Sour Cream: There is debate over whether Swedish Meatballs should be made with sour cream or regular cream. While most recipes use cream, if you prefer the slight tanginess of sour cream (similar to Stroganoff sauce), feel free to use it!
  • Yogurt or reduced-fat and pouring cream can also be used as alternatives. However, note that the gravy may require an additional minute or two to thicken, and it may not have as rich a mouthfeel due to the lower fat content.

How to Freeze Easy Homemade Swedish Meatballs

This meatball recipe yields approximately 48 meatballs, ideal for gatherings and parties. I prefer to prepare them in batches and store them in the freezer in a plastic bag. However, you can easily reheat the meatballs in the oven for a quick and delightful treat!

Furthermore, once these meatballs are cooked and cooled. And, the meatballs can be easily frozen for quick meal preparation during busy weekdays. Simply arrange them on a baking sheet and freeze for a few hours. Once they are frozen solid, transfer them into a plastic freezer bag for storage, where they can remain for several months.

NOTES

  • Bread – While keto bread is preferred, opt for other bread varieties as a substitute. Tear or chop them into small pieces, excluding the crust. Slightly stale bread works well.
  • Alternatively, you can use 1/2 cup of Panko breadcrumbs as a replacement. Though the meatballs may not be as soft, they will still be tender.
  • Storing This Recipe: After preparing the meatballs, allow any leftovers to cool to room temperature. Then, transfer them to a zip-top bag or an airtight container. Cooked meatballs can be refrigerated and will remain fresh for 3 to 4 days.
  • To Freeze: If preferred, you can freeze the formed, uncooked meatballs on a tray until they become firm. Afterwards, transfer them into a freezer-safe, zip-top bag where they can be stored for up to a month in advance. Remember to thaw the meatballs in the refrigerator for at least a day or two prior to use.
  • Alternatively, freeze cooked meatballs in a freezer-safe zip-top bag. Ensure to remove excess air to prolong freshness. Thaw the meatballs overnight in the refrigerator, or gently heat them in the sauce over low heat until thoroughly warmed.
