What are meatballs?

A meatball is ground meat rolled into a small ball, sometimes along with other ingredients such as breadcrumbs, minced onion, eggs, butter, and seasoning. Meatballs are cooked by frying, baking, steaming, or braising in sauce. 

These delicious meatballs are a great way to add vegetables in and are so versatile in any recipes; like appetizers, sandwiches, or main dishes. Although usually, you would use breadcrumbs when making meatballs as a binder along with egg there are alternatives:

In the 1st century A.D., the ancient Roman cookbook Apicius included many meatball-type recipes. Although, meatballs, in general, have multiple creation stories all across the world from Kottbullars in Sweden in Sweden to the various Koftes in Turkey.

What You Will Need

  • ground beef
  • ground pork
  • 2 eggs
  • carrot
  • zucchini
  • Johnny’s Garlic Spread Seasoning
  • coconut aminos (soy sauce alternative) or Tamari (low-sodium soy sauce)
  • better than bouillon, beef flavor
  • sweet basil
  • Kirkland Sweet Mesquite Seasoning
  • almond flour
  •  small onion
  • sweet peppers
  • coconut oil (for frying)

How to Make Holiday Cranberry Savory Meatballs

First: combine ground beef and pork, carrots, zucchini, egg, and pepper in a medium bowl, mixing lightly, but thoroughly. However, it’s best to use a food processor.

Next: Shape into 24-1-inch meatballs.

Third: Pan-fry meatballs in a large pan over medium-high heat until all sides are golden brown, about 10 minutes.

OR Bake in 350 degrees F oven 30 – 40 minutes, flipping after the first 20 minutes.

Last but not least: Make Dipping Sauce: Meanwhile, combine cranberry sauce and barbecue sauce in a medium saucepan: simmer 5 minutes or until flavors are blended.

Using a saucepan. Add together the meatballs and the Cranberry BBQ Sauce and simmer for 25 minutes and/or use as a dipping sauce. (optional)

Holiday Cranberry Beef Meatballs

INGREDIENTS

  • 1 lb ground beef
  • 1 lB ground pork
  • 2 eggs
  • 1 large carrot shredded
  • 1 cup grated fresh zucchini
  • 2 tsp Johnny’s Garlic Spread & Seasoning (or tsp Garlic, minced)
  • 1 tsp coconut aminos
  • 2 tsp better than bouillon, beef flavor
  • 2 tsp sweet basil
  • 1 tbsp Kirkland Sweet Mesquite Seasoning
  • 3/4 cup almond flour
  • 1 small onion, cut into 1-inch pieces
  • 4 mixed sweet peppers
  • coconut oil (for frying)

Cranberry Barbecue Sauce

INSTRUCTIONS

Preheat oven to 350 degrees F For easy cleanup use parchment paper or aluminum foil to line the shallow rimmed baking sheet.

  1. Combine ground beef and pork, carrots, zucchini, egg, seasonings, and pepper in a medium bowl, mixing lightly, but thoroughly or if you have a food processor.
  2. Shape into 24-1-inch meatballs.
  3. Pan-fry meatballs in a large pan over medium-high heat until all sides are golden brown, about 10 minutes.
  4. OR Bake in 350 degrees F oven 30 – 40 minutes, flipping after the first 20 minutes.
  5. Make Dipping Sauce: Meanwhile, combine cranberry sauce and barbecue sauce in a medium saucepan: simmer 5 minutes or until flavors are blended. Lastly, drizzle sauce over skewers or serve as a dipping sauce, if desired.
  6. Add the Cranberry BBQ Sauce and simmer for 25 minutes and/or as a dipping sauce.

NOTE

Other breadcrumbs alternatives are: ground pork rinds|Almond flour or almond meal| Coconut flour| Crushed nuts | Keto bread crumbs |Psyllium husk.

Nut flours burn quicker than bread crumbs, so keep an eye on dinner…
