The ingredients you will need:

  • Wok or Large skillet
  • leftover jasmine rice
  • olive oil
  • sesame oil
  • eggs
  • onions
  • garlic
  • carrots
  • frozen peas and carrots
  • bean sprouts
  • green onions
  • Coconut Aminos or Tamari (low-sodium)

Except for the rice and eggs, all ingredients are interchangeable. Any combination of cooked and cooled rice (which crisps up better when the starches have time to set!), eggs, aromatics (such as onion, shallots, scallions, garlic, and ginger), and protein (pork, chicken, shrimp, or tofu) will result in a fantastic dish. Overall, it’s a well-rounded meal, especially when prepared at home. What’s more, it’s completely adaptable to your preferred add-ons, toppings, or garnishes.

Ingredients

  • 1 – 2 cups chopped Meat of your choice (smoked ham, spam, shrimp, beef, chicken, BBQ Pork,)
  • 3 eggs, scrambled
  • 4 cups Jasmine Long grain rice, Steamed
  • 1/4 cup Coconut Aminos or Tamari (low-sodium)
  • 4 tbsp Olive oil
  • 2 tsp Sesame oil
  • 3 to 4 garlic cloves, minced
  • 1/2 cup onion, chopped
  • 1/2 cup Peas and carrots
  • 2 cups brean sprouts
  • 1/4 cup Green Onions, chopped
  • 1 teaspoon sea salt
  • Freshly ground black pepper

Instructions

  1. In a small bowl, beat the eggs and 1/8 teaspoon of the salt until well combined. Set aside.
  2. Heat 1 tablespoon in a large fry pan on medium-high. When it begins to shimmer. Add the eggs and cook, stirring frequently, until just scrambled, 30 to 60 seconds. Transfer to a large plate
  3. Add 2 teaspoons of olive oil to the now empty skillet and reduce the heat to medium. Add onions, half of garlic and carrots, and cook, stirring occasionally, until they soften and start to brown, which usually takes 5 to 10 minutes. Use a slotted spoon to transfer the vegetables to plate with the eggs.
  4. Using half of the garlic and a tablespoon more olive oil to the now-empty skillet. Cook, stirring constantly, until fragrant, about 30 seconds.
  5. Put remaining oil in the skillet. Add the rest of the ingredients and continue frying for at least 15 minutes or until heated through.
  6. Add soy sauce and sesame oil, then taste and add salt and pepper if necessary. Turn off the heat.
  7. Garnish with green onions. (optional)
  8. Serve and Enjoy!

NOTE

  • Best Cooked Meats To Use: To make this fast and easy; use cooked meats like rotisserie chicken, BBQ Pork (Char Siu – Chinese BBQ Pork), cooked shrimp without the tail, Chinese sausage, etc.
  • Using Fresh Rice: If using fresh rice, ensure it’s thoroughly chilled in the refrigerator before beginning the recipe. However, this step is ESSENTIAL for achieving the desired outcome. For optimal results, it’s recommended to use day-old rice (or rice that has been frozen and thawed).
  • To Store: You can store fried rice in an airtight container in the refrigerator for up to 3 days. However, to reheat, use a skillet or microwave, adding a small amount of water or oil to rejuvenate the texture.
  • To Freeze: Alternatively, you can freeze fried rice for up to 2 months.
  • To Reheat: When you’re ready to enjoy it, simply reheat the frozen fried rice directly in a skillet over medium heat, stirring frequently until heated through. However, add a little water or oil if needed.
