And, all 7 of us, did just that while rolling our eyes when it was our turn to cook dinner.  Yes, we all had chores at a young age, besides working in our grandfather’s corn fields.

These Savory Crispy Spring Rolls can be eaten by itself for a light snack or with a little Sweet Chili Sauce, which has a sweet, garlicky flavor to it with a bit of bite to it. Although, my favorite is just apple cider vinegar with tons of minced garlic or Plum Sauce.

  • 2 pkgs. Spinach (if using frozen Spinach make sure it is well-drained and squeeze out all of the extra juices, first).
  • 1/4 cup feta cheese
  • 1 tablespoon parsley
  • 1/2 cup onion, diced
  • 1 fresh garlic clove, minced
  • 1/4 teaspoon dill weed

Directions:

  • Combine all ingredients in a medium-size bowl.
  • Place 2 teaspoons full of the spinach filling on to the spring roll wrapper and wrap as directed in the video above or package.

Notes:

By draining the cooked meat completely the spring rolls will not turn out soggy when cooked.

To freeze: Savory Crispy Spring Rolls, place in a gallon Ziploc freezer bag and place immediately in the freezer once wrapped The wrapper or Lumpia will become soggy if left out.
