What is Frybread?
Frybread is a Native American fried dough which may range fro bread-like to donut-like depending on the region, as many tribes use different recipes.
A standard frybread recipe typically includes flour, water, salt, a modest quantity of oil or lard, and occasionally baking powder or, less commonly, yeast. These ingredients are combined and kneaded into a basic dough, which is left covered with a cloth for 30 minutes to an hour to allow it to rise. The dough is then divided into small portions, shaped into balls, and either rolled out or stretched into flat discs before being fried in hot oil.
It may be eaten plain, salted, or with sugar or honey, or as a base for Navajo tacos.

The Perfect Blend Flour
This recipe uses The Perfect Blend Flour which has arrowroot flour as one of the ingredients, which softens the mix. Because of food allergies, I use Arrowroot instead of cornstarch. And, Arrowroot powder is used as a thickener, like say in sauces, arrowroot becomes clear when cooked. Arrowroot is made from a tropical root plant whenever a recipe calls for starch.

What’s Xanthan Gum?
Xanthan gum powder; is a soluble fiber, is a common food additive that bakers use in their baking to stabilize ingredients in the recipe or thickener.
Soluble fibers are carbs that your body cannot breakdown. Instead, they absorb water and turn into a gel-like substance in your digestive system, which slows digestion.
Therefore, your body is unable to digest xanthan gum, and it does not provide any calories or nutrients.
History
Xanthan gum was discovered by scientists in 1963. Since then, it has been well-researched and determined safe. Therefore, the FDA has approved it as a food additive and placed no limitations on the amount of xanthan gum a food can contain.
