WHAT’S A BUFFALO WINGS

Best Crispy Buffalo Wings

The chicken wings used for Buffalo wings are usually segmented into three parts. This Buffalo wing is an unbreaded chicken wing section (flat or drumette) that is generally deep-fried then coated or dipped in a sauce consisting of vinegar-based cayenne pepper hot sauce and melted butter prior to serving.

What’s in the Buffalo Sauce?

Cayenne pepper-based hot sauce, melted butter, and vinegar are the standard base of Buffalo wing sauce, which may be made mild, medium, or hot. Other ingredients are also common, such as Worcestershire saice and garlic powder. The cooked wings are placed in a bowl or pot and shaken to coat the wings completely covering them in the sauce before serving.

Buffalo sauce vs Hot Sauce

Buffalo sauce and hot sauce may seem similar, but they have distinct differences. Hot sauce typically comprises cayenne pepper, vinegar, and salt, providing a spicy kick. On the other hand, Buffalo sauce is a variation of hot sauce, enriched with butter and additional ingredients. It boasts a richer and smoother texture, often used as a dip or condiment. While both are spicy, Buffalo sauce is particularly renowned for its association with chicken wings.

History

In 1964, Teressa Bellissimo, the proprietor of Anchor Bar, introduced Buffalo sauce to the world. Back then, chicken wings were often discarded or utilized for making soup stock. When Bellissimo’s son requested a late-night snack for his friends, she ingeniously deep-fried the wings and coated them in a luscious buttery hot sauce. And thus, Buffalo wings, along with Buffalo sauce, made their debut.

Another assertion credits John Young, who relocated to Buffalo from Stockton, Alabama, at the age of 13 in 1948, with popularizing chicken wings in Buffalo. Commencing in 1961, he introduced whole chicken wings, breaded, deep-fried, and served with his signature tomato-based Mumbo sauce at his Buffalo eatery. Before establishing his restaurant, Young conversed with a traveling boxer who mentioned a successful wing-serving establishment in Washington, D.C. Inspired by this, Young decided to specialize in wings. According to Young, the Anchor Bar didn’t include Buffalo

The key to achieving crispier chicken lies in an unexpected ingredient:

Baking powder. While typically associated with baking, baking powder plays a vital role here by slightly raising the skin’s pH levels. This alteration facilitates more efficient protein breakdown, resulting in evenly browned and crispier chicken.

Using baking powder is optional, especially when using an Air Fryer. However, for optimal results, ensure to thoroughly pat the chicken wings dry with a paper towel. Baking powder is a blend of sodium bicarbonate, cream of tartar, and cornstarch. When combined with salt and applied to chicken, it aids in drying out the skin, leading to an extra crispy and crunchy texture.

How to make the Best Crispy Buffalo Wings

  1. Preheat oven to 400°
  2. Next, place a wire rack over a baking sheet.
  3. In a large bowl, toss chicken wings with olive oil, baking powder and seasonings. I usually use Johnny’s seasoning. which I’ve already added lots of granulated garlic beforehand when I first bought it. I love lots of garlic.
  4. Bake until chicken is golden and skin is crispy, 30 to 25 minutes, flipping the wings halfway through.
  5. To make the Buffalo Sauce; In a medium size pot heat butt until melted. Add all of the Buffalo Sauce ingredients into the same pot, but Arrowroot. Make a slurry: Mix arrowroot sauce with a little cold water. While whisking saucepan, add slurry to the sauce to thicken until the desired consistency is achieved.
  6. Toss wings in Buffalo Sauce until well coated.
  7. Serve with blue cheese and celery, if desired.

PLATING

Traditionally, Buffalo wings are served with small sticks of celery and blue cheese dipping sauce on the side. Ranch dressing, however, is the most popular wing dipping sauce in the United States. This condiment acts not only as a dip but as a cooling element for those eating particularly spicy wings.

**Deep Fry Method: Deep Fry wings at 375°F for 10 minutes or until cooked through. Makes wings extra crispy.

**Air-Fryer Method: The wings are first air-fried on medium heat to cook the interior and then the heat is turned up to 400F to crisp up the skin. The result is chicken wings that are soft and tender on the inside and super crispy on the outside.
